American Pale Ale

 

91/2 pounds two row grain

1 pound of carapils 60%

1 oz Mt Hood

2 oz of Cascade

 

Mash at 150 -156 for

1 hour thirty minutes

Sparge with 170 water until

you have enough for five gallons after boil.

 

1 oz Mt. Hood hops boil

1 oz Cascade hops last 10min of boil

1 oz Cascade hops last 2 min of boil

 

Your starting O.G. should be 1.048 or better

My finishing F. G. was 1.025

It came out as a Light Amber color and pretty good body.


Sweet Stout

10 pounds two row grain

1 pound crystal

1\2 pound  Black Patent Malt

1\2 pound Roasted Barley

1 oz Horizon hops (13.6 aa)

British Ale yeast WLP 005

 

Mash at 150 for 1 1\2 hour

Sparge until you have enough for five gallons after boil.

1\2 oz hops for 60 min.

1\2 oz hops for last 10 min.

 

This one came out very nice better than most of my stouts. But be careful seems like

after making this one I always needed a new job within a few days.

5 pounds two row grain

3 pounds Wheat grain

3 oz German Spalt hops

White Labs WLP 300 Hefeweizen yeast.

 

Mash at 150 -155 for 1 1/2 hour or until converted.

Sparge until you have enough for five gallons after boil.

2oz Splat for the 60 min boil

1oz Splat for 2 min for aroma

 

It came out a light color with the cloudy character of wheat beers.

F.G. 1.015
